Crockpot Hawaiian Chicken

I starred this recipe from Brooke a loooong time ago, and I don't know why I am only getting to it now. It was beyond delicious, though, so I am sure it won't be too much longer before I'm making it again!


It did end up pretty sweet like Brooke said, but I enjoyed it! Joe, you don't know what you're talking about, man.



Ingredients:
  • 4 boneless, skinless chicken breasts
  • salt to taste
  • 1 (15 ounce) can pineapple slices, juice reserved
  • 1/3 cup packed brown sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground ginger
  • 1/4 cup cornstarch

Place chicken in slow cooker sprayed with non-stick spray and sprinkle with a little salt. Place pineapple slices over chicken. In a small bowl, combine pineapple juice, brown sugar, lemon juice, ginger and cornstarch and stgir until combined. Pour over chicken. Cover and cook on low for 4 to 5 hours or hight for 2 1/2 to 3 hours. Serve over rice.

  1. That looks delicious and bonus that you can make it in the crockpot! I bet it would be good with a little terriyaki sauce added as well.

  2. Looks great and sounds easy, I'll try it tonight for the kids and the in-laws. I'm assuming that you put the pineapple slices on top of the chicken in the crockpot....

    1. I made this, myself, and right before it was done, I placed it in a baking pan , sprinkled chopped green onions on top, and placed under the broiler until it got a beautiful toasty brown on top...

  11. I live here in Hawaii. This recipe looks awesome. The flavor profile is legit. Using corn starch vs flour is consistent!
    There r some variants u could try. Fresh pineapple. Chunks vs slices. Fresh ginger slices instead of dried ground. Adding a cup of guava juice. Instead of salt add one tablespoon soy sauce. I loved the previous idea of adding chopped green onion at the end, that's local style. And lastly, some locals like heat, I'd suggest ground red pepper flakes at beginning to taste.

  12. Looks yummy! I had a similar recipe years ago, but it wasn't for the slow cooker. Since I absolutely love my slow cooker, this is going on my "To-Try" list!

  14. I had arecipe years ago that used large chunks of green bell pepper and sweet yellow onion too...it was sweet and sour but much like this..so you could probably add these too it when it is almost done so they don't get too soft..just some flavors...just a thought..
