Red Velvet Cupcakes

I made a variety of cupcakes for Danny's first birthday party last month; I seem to be doing that more and more. I can never seem to decide on a cake flavor, and with cupcakes, I don't have to choose!


I have recently become enamored with the Cake Mix Doctor and found this recipe for Red Velvet Cupcakes over at her site. I must confess, however, to using canned cream cheese frosting rather than the peppermint, though I think that would be beyond delicious!

These were simple and fantastic, and I received many compliments on them. But really - who can resist a cute little cupcake?!


Ingredients
  • 1 package (18.25 ounces) plain German chocolate cake mix
  • 1 package (3.4 ounces) vanilla instant pudding mix
  • 1 cup sour cream (see Note)
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1 bottle (1 ounce) red food coloring
  • 3 large eggs
  • 1 cup miniature semisweet chocolate chips
  • White Chocolate Peppermint Cream Cheese Frosting (see below)

Note: Use reduced-fat sour cream, and you’ll sacrifice only fat and calories, not flavor. If you can’t find plain German chocolate cake mix, buy the pudding in the mix version and forgo the added pudding. For more chocolate flavor, use chocolate pudding mix instead of vanilla, but the cake won’t be as red in color.

1. Place a rack in the center of the oven and preheat the oven to 350° F. Line 24 cupcake cups with paper liners. Set the pans aside.

2. Place the cake mix, pudding mix, sour cream, water, oil, food coloring, and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look thick and well combined. Fold in the chocolate chips. Spoon or scoop 1/3 cup batter into each lined cupcake cup, filling it three quarters of the way full. (You will get between 22 and 24 cupcakes; remove the empty liners, if any.) Place the pans in the oven.

3. Bake the cupcakes until they spring back when lightly pressed with your finger, 18 to 20 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before frosting.

4. Meanwhile, prepare the White Chocolate Peppermint Cream Cheese Frosting.

5. Place a heaping tablespoon of frosting on each cupcake and swirl to spread with a short metal spatula or a spoon, taking care to cover the tops completely. Place these cupcakes, uncovered or in a cake server, in the refrigerator until the frosting sets, 20 minutes. The cupcakes are ready to serve.

Store the cupcakes, in a cake saver or under a glass dome, at room temperature for up to 3 days or in the refrigerator for up to 1 week. Or freeze them, wrapped in aluminum foil or in a cake saver, for up to 6 months. Thaw the cupcakes overnight in the refrigerator before serving.

White Chocolate Peppermint Frosting

  • 6 ounces white chocolate, coarsely chopped
  • 4 ounces (half an 8-ounce package) reduced-fat cream cheese, at room temperature
  • 4 tablespoons (1/2 stick) butter, at room temperature
  • 1 teaspoon peppermint extract
  • 2 to 2 1/2 cups confectioners sugar, sifted

1. Place the white chocolate in a small glass bowl in the microwave oven on high power for 1 minute. Remove the bowl from the oven and stir with a wooden spoon or rubber spatula until it is smooth. Set the chocolate aside to cool.

2. Place the cream cheese and butter in a large mixing bowl. Beat with an electric mixer on low speed until well combined, 30 seconds. Stop the machine. Add the melted white chocolate and blend on low speed until just combined, 30 seconds. Add the peppermint extract and 2 cups of the confectioners’ sugar and blend on low speed until the sugar is incorporated, 30 seconds more. Increase the mixer speed to medium and beat until the frosting is fluffy, 1 minute more, adding up to 1/2 cup more sugar if needed to make a spreadable consistency.

3. Use to frost any chocolate cupcakes of your choice.

Mocha Cupcakes

I think I love cupcakes more than actual cake. They are just so adorable and you can have so much fun with them!

For Danny's first birthday party, I made a variety of cupcakes. As I've mentioned before, I've pretty much given up on "from scratch" cakes and cupcakes, and I'm amazed at how many recipes are out there with a cake mix base.

I found these mocha cupcakes on Big Red Kitchen, and they were absolutely incredible. There was just the right balance of coffee and chocolate, and they received rave reviews.


Ingredients
  • One pkg Devil’s food cake mix
  • 1 3.9 ox. pkg instant chocolate pudding
  • 2 cups sour cream
  • 1 cup melted butter
  • 6 eggs
  • One double shot espresso (or 2 T. instant coffee or espresso powder)
  • 2 cups semisweet chocolate chips

Preheat oven to 350° and fill your cupcake pan with liners.

In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in sour cream, melted butter, eggs and espresso. Beat on low speed until blended. Scrape bowl, and beat 4minutes on medium speed. Blend in chocolate chips. Pour batter into prepared pan.

Bake in preheated oven for 18-20 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Cookies 'n Cream Cupcakes

My husband's parents' birthdays are just a few days apart, and we usually celebrate them together. Since they are both avid horse racing fans, we joined them at Monmouth Park for some racing and fun.

I volunteered to bring a dessert and knew I'd make these yummy Cookies n Cream cupcakes. I've long ago stopped pretending that I can bake, but I love using recipes that make a box mix just a little more exciting.

These were fast and easy to whip up, and they were downright delicious. The sour cream and the Oreo bits made them taste (and look!) almost gourmet, and you can't tell at all that the base is courtesy of Betty Crocker.

Everyone also got a kick out of the "surprise" Oreo on the bottom. :)


Ingredients

  • 30 Oreo cookies
  • 1 package (18.25 ounces) plain white cake mix
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 3 Large eggs
  • 1 teaspoon vanilla

1. Place a rack in the center of the oven and preheat the oven to 350F. Line 24 cupcake cups with paper liners. Set the pans aside.

2. Count out 12 Oreos and separate the top and bottom wafers. Make sure each has some of the icing on it. Place one wafer, icing side up, in the bottom of each paper liner. Set them aside. Place the remaining 18 Oreos between sheets of waxed paper or in a large, closed zipper-lock bag and crush them by rolling over them with a rolling pin. Set these crumbs aside.

3. Place the cake mix, sour cream, oil, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 1 1/2 minutes more, scraping down the sides again if needed. Measure out 1 1/2 cups of the crushed Oreos and fold these into the batter until well incorporated. Set aside the remaining crushed Oreos for the frosting. Spoon or scoop 1/3 cup batter into each lined cupcake cup, filling it three quarters of the way full. (You will get between 22 and 24 cupcakes; remove the empty liners, if any.) Place the pans in the oven.

4. Bake the cupcakes until they are lightly golden and spring back when lightly pressed with your finger, 18 to 20 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before frosting.

Store these cupcakes, in a cake saver or under a glass dome, at room temperature for up to 3 days or in the refrigerator for up to 1 week. If you plan to freeze them, don't add the cookie-crumb topping. Wrap them I in aluminum foil or in a cake saver and freeze for up to 6 months. Thaw the cupcakes overnight in the refrigerator and top with cookie crumbs before serving.

COOKIES AND CREAM FROSTING

1/2 cup (1 stick) unsalted butter, at room temperature

1 3/4 cup confectioners sugar, sifted

a pinch of salt

1/3 cup whipping cream

1/2 tsp vanilla extract

remaining crushed Oreos

Mix together butter, confectioners sugar, and a pinch of salt until creamy. Increase your mixer speed to high and beat until its light and fluffy. Add whipping cream and vanilla. Beat until its smooth. Fold in crushed Oreos. Makes enough to frost 24 cupcakes.

Chocolate Chip Cookie Dough Cupcakes

I planned on making cupcakes to bring to my grandmother's birthday party and wanted something easy, unique, and delicious. While I love to bake, I'm not so good with the whole from-scratch concept, so I googled The Cake Doctor for a semi-homemade treat.

This recipe did not let me down! It was so easy to throw together and yielded a fabulous cupcake with a nice surprise inside. I wasn't a huge fan of the frosting, but I think that's in part due to the fact that I used store-brand cocoa - I haven't liked it in other recipes, so I'll try a "real" brand next time.

Instead of a log of cookie dough, I bought a package of the break-and-bake cookies - the mini size. They were perfect; I threw the whole thing in the freezer and then just broke off what I needed.

These were a crowd pleaser for sure - make them today!


Ingredients
  • 24 paper liners for cupcake pans (2 1/2-inch size)
  • 1 package (18.25 ounces) plain yellow cake mix
  • 1 package (3.4 ounces) vanilla instant pudding mix
  • 1 cup whole milk
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 package (1 pound) frozen cookie dough (see "the Cupcake Doctor says" below)
  • Chocolate Buttercream (see below)

1. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Line 24 cupcake cups with paper liners. Set the pans aside.

2. Place the cake mix, pudding mix, milk, oil, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look well blended. Spoon or scoop a heaping 1/4 cup batter into each lined cupcake cup, filling it two thirds of the way full. (You will get between 22 and 24 cupcakes; remove the empty liners, if any.) Cut the frozen dough pieces in half to make 24 pieces. Place a frozen cookie dough piece on top of each cupcake. Place the pans in the oven.

3. Bake the cupcakes until they are golden and spring back when lightly pressed with your finger, 23 to 27 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before frosting. They may sink a bit in the center.

4. Meanwhile, prepare the Chocolate Buttercream.

5. Place a heaping tablespoon of frosting on each cupcake and swirl to spread it out with a short metal spatula or a spoon, taking care to cover the tops completely. The cupcakes are ready to serve.

The Cupcake Doctor says...

If you use the 18-ounce logs of refrigerated chocolate chip cookie dough (instead of the 1-pound packages of frozen dough), cut them into 24 equal pieces and freeze them before using them in this recipe. It's important to use frozen dough, because you don't want it to bake completely and become a cookie. You want the center to be gooey when you bite into it.

Chocolate Buttercream

Makes 3 cups, enough to frost 24 cupcakes (2 1/2-inch size) generously
Preparation time: 10 minutes

  • 8 tablespoons (1 stick) butter, at room temperature
  • 1/2 cup unsweetened cocoa powder
  • 3 cups confectioners' sugar, sifted
  • 3 to 5 tablespoons milk
  • 1 teaspoon pure vanilla extract

1. Place the butter and cocoa powder in a large mixing bowl. Blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds. Stop the machine and add the confectioners' sugar, 3 tablespoons of the milk, and the vanilla. Blend with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the speed to medium and beat until light and fluffy, 1 minute more. Add 1 to 2 tablespoons more milk if the frosting is too stiff.

2nd Blogiversary: Spaghetti and Meatball Cupcakes

This past Saturday marked two years since I started this blog. I am still amazed at the fact that it wasn't something I just did for a week and then forgot about. Even more so, however, I continue to be astounded that people actually READ this.

I have loved learning my way around the kitchen (and the camera) over the past couple of years and I thank you for coming along for the ride.

To celebrate, Ryan and I made these Spaghetti and Meatball Cupcakes (courtesy of the fantastically adorable book, Hello, Cupcake!) since we were going to have a family movie night and watch, of course, Cloudy with a Chance of Meatballs.


Ryan helped me with most of this and certainly ate his fair share of the final product! The only change I made was to replace the Ferrero Rocher candy with a Lindt truffle to avoid the hazelnuts. I also learned that I should have put the chocolates into the fridge or freezer for a few minutes; they started melting a little when I placed them in the jelly.

Ingredients
  • 1 box yellow cake mix, plus ingredients listed on box
  • 1 batch of buttercream or vanilla icing, storebought or homemade
  • 1/2-1 teaspoon unsweetened cocoa powder
  • yellow food coloring
  • 12-24 Ferrero Rocher candies (or candies of similar size)
  • 3/4 cup strawberry preserves (sugar-free provides better color)
  • small amount of white chocolate (I literally used less than 1 chip)

Bake the cupcakes according to the box and allow to cool completely.

Combine the frosting, cocoa powder, and food coloring and mix to desired color. Dump in large ziploc bag. Cut the bottom corner of the bag, creating a very small (maybe 1/4") hole.

Pipe the icing in a random pattern on the top of the cupcakes to look like spaghetti.

Microwave the fruit preserves just to thin out a bit and add the candies. Top each cupcake with a "sauce" covered "meatball." Grate the white chocolate over the top and enjoy!

Red Velvet Chocolate Drenched Heartcakes

I love making little holiday-themed treats, and Picky Palate has really been my go-to site for this. She's so creative yet her recipes are very easy and fast. I would never think of some of her concoctions, but I love them!


These little red velvet hearts completely fit in with what I was looking for - something easy, yummy, and a little different.

I had a little bit of drama with this recipe, however. I was in Target and stopped to pick up the cake mix and condensed milk. I was going to buy a little heart shaped mold (I had the package IN MY HAND!), but when I saw it, I remembered that I already had one. Score - I saved myself $10.

Then I was all set to make them but the hearts looked much smaller than in the store. Hmm. Sure enough, I realized that what I had was a silicone ice cube tray in heart shapes, and not an oven-save pan.

By now it was two days before Valentine's Day, and by then Target was, of course, sold out of the pans. A couple of different Targets later (made by my wonderful husband and son), however, I was the proud owner of silicone heart-shaped cupcake liners.


Ryan of course helped me make this little treat, and we brought most of them to my parents' house for a pre-Valentine's-Day dinner. I really liked the chocolate ganache, and I used some leftover funfetti sprinkles from our Valentine's Day cupcakes before the chocolate set.


The only thing I did differently was not adding in the extras to the batter that Jenny did - but that was purely because I didn't read the whole recipe. I saw "cake mix" and "eggs" and "oil" and I assumed she was listing the ingredients from the box. It wasn't until later that I realized that she enhanced the cake even more. I'd love to try her version next time - but for now, these straight-out-of-the-box hearts were pretty good!


Ingredients
  • 1 box red velvet cake mix, plus the ingredients listed on the box
  • 1 small can sweetened condensed milk
  • 1 cup chocolate chips

1. Preheat oven to 350 degrees F. In a stand of an electric mixer prepare the cake mix as directed. With a cookie scoop or spoon, place cake batter into well greased little heart molds or paper lined cupcake tins, just over 1/2 full. Bake for 20-25 minutes or until toothpick comes out clean from center. Remove and let cool. With the help of a plastic knife, carefully remove hearts from molds. If you are using regular cupcakes, remove wrappers. Place little cakes onto a cooling rack placed over a rimmed baking sheet.

2. To prepare chocolate sauce, pour sweetened condensed milk into a small saucepan over medium heat. When hot, pour in chocolate chips and stir until smooth. Pour chocolate sauce over cupcakes and use a little plastic knife to frost the sides of hearts. Let chocolate set slightly or eat immediately if you like it gooey!

Valentine's Funfetti Cupcakes

When Ryan's preschool class has a party, I like to try to bring in something somewhat healthy for the kiddies. For the Valentine's Day party, I was the first to sign up - and all thoughts of fruits and vegetables escaped from my head and I nabbed the cupcake spot.


Though I used canned icing, I was excited to try a homemade version - I even bought pink and white sprinkles to use. I tried to track down this cake's origin, and I think it started at Baking Bites. But I got it from Amber who got it from Annie... so I hope I'm properly giving credit!

They were, of course, nice and easy to put together, and they were rather yummy! I do think I would make more next time, though - I barely got the 20 I needed (17 kids + 2 teachers + 1 for me to try!) and some were rather dinky. I would probably double this if I were feeding a large crowd.


Of course, it wasn't until I was about to make these that I realized I had only 1 egg. I subbed an individual serving cup of applesauce instead, and they were perfect! And it made me feel better about giving these to a group of 3-year-olds. :)

As usual, I had my trusty helper in the kitchen with me - cowboy pajamas and sticker collection and all!


Ingredients
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, at room temperature
  • 1 cup sugar
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup milk
  • 1/4 cup rainbow sprinkles

Directions
1. Preheat the oven to 350 degrees F. Grease and flour the sides of two 5-inch round cake pans, and line the bottom of the pans with parchment paper.

2. In a small bowl, combine the flour, baking powder, and salt. Stir together and set aside. In the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Add the egg whites to the bowl and beat until combined. Add in the vanilla and almond extracts and mix until incorporated. Mix in the dry ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix just until incorporated. Fold in the sprinkles with a spatula.

3. Divide the batter evenly between the prepared pans. Bake until a toothpick inserted in the middle comes out clean (about 30-40 minutes for pans - 20 minutes for cupcakes). Allow to cool in pans 10 minutes, then remove to a wire rack to cool completely. Frost cooled cakes as desired.

Mocha Cupcakes

When Annie first posted this recipe for White Chocolate Mocha Cupcakes, I starred it immediately and couldn't wait to make them. Chocolate + Coffee + Cupcakes = goooooood.

Our families were coming over to our house after brunch on Mother's Day, and I thought these would be a perfect contribution. I even got to whip out the cupcake stand that I haven't used since Ryan's first birthday party!

If you aren't a coffee drinker, fret not - you really can't taste the actual coffee. It just adds a layer of richness to the chocolate and really enhances the flavor.

(I don't know why the top right of this photo is so overexposed... pretend there isn't a chunk of picture missing, 'kay?)

These cupcakes were delicious, and I received many compliments on them - especially on the heart decorations! I don't have piping bags, so I used a sandwich baggie which worked beautifully. I do wish I had made the hole just slightly bigger for thicker outlines, but that's okay.

I also had no success at all with the icing. I'm not sure what I did wrong. The first portion of heavy cream whipped right up, but then that was it. Once I added the white chocolate/cream part, it kind of thickened a little, but no peaks. I kept the white chocolate/cream combo in the fridge, but maybe it wasn't cool enough? That's really all I could think of. So, on our way to brunch, we stopped at the grocery store for some store-bought frosting. Oh well.

So for obvious reasons, I removed the "White Chocolate" part of the title. :)


Ingredients

For the cupcakes:
  • 5 oz. semisweet chocolate, coarsely chopped
  • 2 cups cake flour
  • 1/2 tsp. salt
  • 1/2 cup sour cream
  • 5 tbsp. cocoa powder
  • 2 1/2 tsp. baking soda
  • 4 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 cups hot coffee
  • 12 tbsp. unsalted butter, softened
  • 1 1/4 cup plus 2 tbsp. brown sugar

For the whipped cream:

  • 6 oz. white chocolate, finely chopped
  • 1 1/2 cups cold heavy cream

For decorating:

  • 4 oz. chocolate (I used semisweet), finely chopped
  • chocolate sprinkles

Directions:
To make the cupcakes, preheat the oven to 350 degrees F. Line two cupcake pans with paper liners. In a double boiler, melt the chocolate. Let cool slightly. In a medium bowl, sift together the flour and salt. In another bowl, whisk together the sour cream, cocoa powder and baking soda. Mix to form a paste and then slowly whisk in the coffee. In a small bowl, whisk together the eggs and vanilla.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until fluffy. Slowly add the egg and vanilla mixture and beat until combined. Add the melted chocolate and beat well. Add the flour mixture, alternating with the liquid mixture, beating just until all ingredients are incorporated.

Divide the batter evenly between the cupcake liners. Bake 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans 10 minutes, then transfer to a wire rack to cool completely.

To make the white chocolate whipped cream, place the chopped white chocolate in a heatproof bowl set over a pan of simmering water. Melt, stirring occasionally. When the chocolate is almost melted, bring 1/2 cup of the cream to a boil. Once the chocolate is fully melted, transfer the bowl to a counter, pour in the hot cream and let it sit for one minute. Then stir gently with a spatula until the chocolate is smooth. Let the chocolate sit until it reaches room temperature – the chocolate can’t be the least bit warm when it is added to the whipped cream.

In the bowl of a stand mixer fitted with the whisk attachment, beat the remaining 1 cup cream only until it holds the softest peaks. With the mixer on high speed, add the white chocolate all at once and continue to beat just until the mixture holds firm peaks. Transfer the cream to a bowl, press a piece of plastic wrap gently against the surface and refrigerate for at least 2 hours.

While the cream is setting, make the chocolate decorations. Spread a piece of wax paper on a flat work surface. Place the chopped chocolate in a heatproof bowl and microwave in 30 seconds intervals, stirring in between, until completely melted. Allow the chocolate to cool for several minutes (I probably waited 10-15 minutes). Transfer the melted chocolate to a plastic squeeze bottle (a plastic bag with the corner cut off would also work). Carefully squeeze the melted chocolate onto the wax paper in the desired shape. Allow to set completely. Carefully peel off of the wax paper.

Frost the cupcakes with the now set white chocolate whipped cream, top with chocolate sprinkles, and garnish with chocolate decorations. Store in the refrigerator but serve at room temperature for best flavor.

My first "piping" experience

Since I used boxed funfetti cupcakes and its coordinating canned icing (I know, scandalous!), there is no recipe in this post.

However, this was the very first time I tried piping rather than slapping the frosting on with a spatula. I dumped the frosting into a ziploc and clipped the corner, and poof!

Although, note to self: 1 can would be fine when you do the spatula method, but when piping? Spring for the extra can. My little masterpieces got smaller and smaller as I went through the tin!

Mini Thin Mint Cheesecake Cups

Wow. These little cups from The Picky Palate were fabulous.

I wanted something to make for Mother's Day and, as usual, went searching through my starred posts on Google Reader. These little guys seemed perfect - different, easy, and good.

I was surprised, actually, at exactly HOW easy they actually were. Maybe they just LOOK decadent...? Well, whatever, they were easy.

They also tasted great. In fact, Pat emailed me a little while ago and told me to take it easy tonight and that we'd just have leftovers for dinner. He also said that if we don't have enough leftovers, he'd be more than happy to eat the remaining few "little cheesecake things" for dinner.





Ingredients:
  • 13 Thin Mint Cookies, ground in food processor or blender (you can also use the mint Oreos)
  • 2 Tablespoons melted butter
  • 8 oz softened cream cheese
  • 1/2 Cup sugar
  • 1 egg
  • 2 1/2 Tablespoons buttermilk
  • 5 Thin mint cookies coarsely crumbled
  • 1/4 Cup chocolate chips
  • 2-3 Tablespoons heavy cream
  • 3-5 Thin mint cookies, crumbled (for top of cups) (I also topped the cups with chopped white and milk chocolate chips.)

Preheat oven to 300 degrees F.

Combine ground cookies and butter in a medium bowl. Drop about 1 Tablespoon of cookie mixture into 24 mini cupcake tins that has been sprayed with cooking spray. (If you have mini cupcake paper wrappers I'd use them, it was difficult to remove my cheesecake cups from the tin itself). Press crust into cups with back of a spoon.2. In an electric or stand mixer cream the cream cheese and sugar until well combined. Add egg and buttermilk until well combined as well. Stir in crumbled cookies. Pour cheesecake mixture into cupcake tins filled almost to the very top. Bake for 25-28 minutes or until cooked through. Remove and cool for 15 minutes. Melt chocolate chips in microwave until melted and smooth. Stir in heavy cream until smooth and shiny. Spoon about 1 Tablespoon over each cheesecake cup and sprinkle with additional crumbled cookies.
